Dinner was a sell-out!

Tonight’s dinner was simple and delicious. We had coconut creamed smoked Mangrove Jack.
Every time I receive any food from home (my mother’s village),my utmost attention goes to the preparing of them knowing very well the troubles my relatives go through preparing for us. And for aunty dearest, she made sure it was nicely packed for the six-hour journey too. Traditional mode of preserving food, still the best yet I reckon.
I try to encourage and teach my sons to eat more garden vegetables and fresh fruits. When vegetables are the main ingredients, special attention is given for food preparation for my children’s sake. Well tonight’s dinner was a sell out! No left overs and no one asked for a plate of rice for the first time. Better stick to this idea,it’s gradually working on the boys.
Coconut creamed Mangrove Jack served with local veggies
Ingredients
- 2 cups freshly extracted coconut juice
- 1 med sized smoked mangrove jack
- grated ginger,garlic,carrots, bay leaves
- 1/2 onion finely sliced
- beans
- chicken stock cube to boost the taste
- 2 t/spoon salt
- Previously boiled banana with skin.
- NB; you can prepare to have your fish with any desired garden vegies
Simply pour the coconut cream into the pan,bring to boil, throw in the salt, garlic, ginger and the bay leaves,put in the greens, then gently put the smoked fish and sprinkle the stock cube over the fish and greens. Make sure attention is given to the fish or we may over cook it. After 3 minutes, my greens and fish are ready to be served.
